Ingredients

  • 600 gfresh sardines cleaned and filleted
  • 400 gonions thinly sliced
  • 150 mlwhite wine vinegar
  • 100 mldry white wine
  • 40 ggolden raisins
  • 30 gpine nuts
  • 50 gplain flour for dredging
  • 80 mlolive oil
  • 10 gsugar

Instructions

  1. Dust sardines in flour; fry in hot olive oil for 2 minutes per side until golden; drain and season.
  2. Slowly cook onions in a fresh pan with a splash of oil for 25 minutes until very soft and golden.
  3. Add vinegar, wine, and sugar; simmer 5 minutes.
  4. Soak raisins in warm water for 10 minutes; drain.
  5. In a deep dish, layer sardines, caramelised onions, raisins, and pine nuts. Repeat layers.
  6. Pour any remaining onion vinegar over the top; cool, cover, and refrigerate for at least 12 hours.
  7. Serve at room temperature with polenta or crusty bread.
