Ingredients

  • 1 cupsbasmati or long-grain rice
  • 1 mediumtomatoes, pureed
  • 1 mediumonion, diced
  • 1 tspmustard seeds
  • 1 leavescurry leaves
  • 1 tspturmeric
  • 1 tspsambar powder
  • 1 tbspoil
  • 1 tspsalt

Ingredients

  • 1.5 cups basmati or long-grain rice
  • 3 medium tomatoes, pureed
  • 1 medium onion, diced
  • 0.5 tsp mustard seeds
  • 10 leaves curry leaves
  • 0.5 tsp turmeric
  • 1 tsp sambar powder
  • 3 tbsp oil
  • 1.25 tsp salt

Instructions

  1. Cook rice until fluffy; spread out to cool slightly.
  2. Heat oil; add mustard seeds and curry leaves; let splutter.
  3. Add onion and sauté 4 minutes. Add tomato puree, turmeric, sambar powder, salt.
  4. Cook the tomato masala until it thickens and oil separates, about 10 minutes.
  5. Add cooked rice; toss gently to combine. Serve hot or at room temperature.
