- 1 cupsmixed vegetables (potato, cauliflower, peas, carrot)
- 1 tbspbutter
- 1 mediumonion, finely diced
- 1 mediumtomatoes, finely diced
- 1 tbspgarlic-ginger paste
- 1 tbsppav bhaji masala
- 1 tspred chili powder
- 1 rollspav (bread rolls)
- 1 tbsplemon juice
- 1 tspsalt
Ingredients
- 4 cups mixed vegetables (potato, cauliflower, peas, carrot)
- 3 tbsp butter
- 2 medium onion, finely diced
- 3 medium tomatoes, finely diced
- 2 tbsp garlic-ginger paste
- 3 tbsp pav bhaji masala
- 1 tsp red chili powder
- 8 rolls pav (bread rolls)
- 2 tbsp lemon juice
- 1.5 tsp salt
Instructions
- Pressure cook all vegetables until very soft; drain and roughly mash.
- Heat butter in a large pan; sauté onion until golden, 7 minutes.
- Add garlic-ginger paste, tomatoes, pav bhaji masala, red chili, and salt; mash and cook 10 minutes.
- Add mashed vegetables; fold in and mash together on the pan.
- Cook and mash on medium heat 5 minutes; add a splash of water if needed.
- Finish with lemon juice and extra butter; garnish with raw onion and cilantro.
- Toast pav rolls on buttered tawa; serve alongside the bhaji.
