Ingredients

  • 500 gsalt cod (morue), desalted overnight
  • 300 gpotatoes, boiled and mashed
  • 60 mlolive oil
  • 80 mllow-fat milk, warm
  • 2 wholegarlic cloves
  • 15 mllemon juice
  • 1 to tasteblack pepper
  • 4 slicescrusty baguette slices (to serve)

Instructions

  1. Simmer desalted cod in water 10 min; drain and flake, removing bones.
  2. Blend cod with garlic in a food processor.
  3. With motor running, drizzle in olive oil, then warm milk alternately until creamy.
  4. Fold in mashed potato; season with lemon juice and pepper.
  5. Serve warm with toasted baguette. Optionally bake at 200°C for 10 min for a golden top.
