  • 200 gcrocodile tail meat
  • 3 wholefinger limes
  • 1 wholeegg yolk
  • 60 mlmacadamia oil
  • 1 wholegarlic clove
  • 15 mllemon juice
  • 5 gfresh thyme
  • 2 gsea salt

  • 200 g crocodile tail meat
  • 3 whole finger limes
  • 1 whole egg yolk
  • 60 ml macadamia oil
  • 1 whole garlic clove
  • 15 ml lemon juice
  • 5 g fresh thyme
  • 2 g sea salt

Instructions

  1. Cut croc meat into 3cm cubes; marinate with lemon, thyme, and salt 30 min.
  2. Whisk egg yolk with garlic; drizzle macadamia oil slowly whisking to make aioli.
  3. Stir in finger lime pearls.
  4. Thread croc meat on skewers.
  5. Grill on high 3 min per side.
  6. Serve with finger lime aioli.
