- 250 gstriploin steak
- 150 mlMalbec wine
- 2 wholeshallots
- 80 mlbeef stock
- 20 gbutter
- 3 gfresh thyme
- 15 mlolive oil
- 2 gsea salt
- 2 gblack pepper

- 250 g striploin steak
- 150 ml Malbec wine
- 2 whole shallots
- 80 ml beef stock
- 20 g butter
- 3 g fresh thyme
- 15 ml olive oil
- 2 g sea salt
- 2 g black pepper
Instructions
- Season steak with salt and pepper.
- Sear in olive oil 3 min per side for medium-rare; rest.
- Sauté minced shallots in same pan 3 min.
- Add Malbec; reduce by two-thirds.
- Add stock; simmer 5 min.
- Finish with butter; adjust seasoning.
- Slice steak; drizzle with Malbec sauce.
