Ingredients
- 800 gbeef topside, sliced thin (Rouladenfleisch)
- 30 gGerman mustard
- 4 wholedill pickles, sliced lengthways
- 1 wholeonion, finely diced
- 4 wholelean bacon slices
- 400 mlbeef stock
- 15 gtomato paste
- 15 mlsunflower oil
- 1 to tastesalt and pepper
Instructions
- Lay beef slices flat; spread with mustard, top with bacon, onion, and pickle.
- Roll tightly; secure with toothpicks or kitchen twine.
- Brown roulades in oil on all sides; remove and set aside.
- Deglaze pan with stock; add tomato paste. Return roulades.
- Braise covered at 160ยฐC for 75โ90 min until tender. Reduce sauce and serve.
