Ingredients

  • 800 gbeef topside, sliced thin (Rouladenfleisch)
  • 30 gGerman mustard
  • 4 wholedill pickles, sliced lengthways
  • 1 wholeonion, finely diced
  • 4 wholelean bacon slices
  • 400 mlbeef stock
  • 15 gtomato paste
  • 15 mlsunflower oil
  • 1 to tastesalt and pepper

Instructions

  1. Lay beef slices flat; spread with mustard, top with bacon, onion, and pickle.
  2. Roll tightly; secure with toothpicks or kitchen twine.
  3. Brown roulades in oil on all sides; remove and set aside.
  4. Deglaze pan with stock; add tomato paste. Return roulades.
  5. Braise covered at 160ยฐC for 75โ€“90 min until tender. Reduce sauce and serve.
