Ingredients

  • 800 gvenison shoulder, cubed
  • 200 mlred wine (dry)
  • 400 mlbeef stock
  • 2 wholecarrot, diced
  • 2 wholecelery stalks, diced
  • 1 wholeonion, diced
  • 6 wholejuniper berries, crushed
  • 2 wholebay leaves
  • 20 gtomato paste
  • 15 mlsunflower oil
  • 1 to tastesalt and pepper

Instructions

  1. Brown venison in batches in hot oil; season with salt and pepper.
  2. Sautรฉ onion, carrot, celery in same pot until softened.
  3. Add tomato paste; stir 1 min. Add wine, stock, juniper, and bay leaves.
  4. Return venison; braise covered at 160ยฐC for 90 minโ€“2 hours until tender.
  5. Remove bay leaves; adjust seasoning. Serve with Spรคtzle or potato dumplings.
