Ingredients

  • 200 gsmoked mackerel fillets, skin removed and flaked
  • 250 gcooked puy lentils
  • 200 gcooked beetroot, diced
  • 60 gwatercress
  • 100 gcucumber, diced
  • 80 glow-fat Greek yogurt
  • 15 gcreamed horseradish
  • 15 mllemon juice
  • 15 gcapers
  • 1 to tastesalt and black pepper

Instructions

  1. Mix Greek yogurt, horseradish, and lemon juice together. Season with salt and pepper to make the dressing.
  2. Divide lentils between two bowls. Top with beetroot, cucumber, and watercress.
  3. Place flaked mackerel on top. Scatter capers over.
  4. Drizzle horseradish dressing generously and serve immediately.
