Ingredients
- 200 gsmoked mackerel fillets, skin removed and flaked
- 250 gcooked puy lentils
- 200 gcooked beetroot, diced
- 60 gwatercress
- 100 gcucumber, diced
- 80 glow-fat Greek yogurt
- 15 gcreamed horseradish
- 15 mllemon juice
- 15 gcapers
- 1 to tastesalt and black pepper
Instructions
- Mix Greek yogurt, horseradish, and lemon juice together. Season with salt and pepper to make the dressing.
- Divide lentils between two bowls. Top with beetroot, cucumber, and watercress.
- Place flaked mackerel on top. Scatter capers over.
- Drizzle horseradish dressing generously and serve immediately.
