Authentic Yucatan cochinita pibil with achiote marinade and banana leaves. Slow-roasted high-protein pulled pork for tacos. A Mexican classic.

Ingredients

  • 1200 gpork shoulder
  • 80 gachiote paste
  • 180 mlsour orange juice
  • 8 clovesgarlic
  • 5 gcumin
  • 5 gblack pepper
  • 4 unitscloves
  • 3 gcinnamon
  • 4 unitsbanana leaves
  • 200 gred onion
  • 2 unitshabanero chile

Ingredients

  • 1200 g pork shoulder
  • 80 g achiote paste
  • 180 ml sour orange juice
  • 8 cloves garlic
  • 5 g cumin
  • 5 g black pepper
  • 4 units cloves
  • 3 g cinnamon
  • 4 units banana leaves
  • 200 g red onion
  • 2 units habanero chile

Instructions

  1. Blend achiote, orange juice, garlic, cumin, pepper, cloves and cinnamon into marinade.
  2. Score pork, coat thoroughly with marinade, refrigerate 12+ hours.
  3. Line baking dish with banana leaves, add pork, wrap tightly.
  4. Bake at 165°C for 3.5 hours.
  5. Shred pork in its juices.
  6. Make habanero-pickled onion by macerating red onion in habanero and lime.
  7. Serve in tortillas with pickled habanero onions.
