Ingredients

  • 200 gspaghetti or tonnarelli
  • 60 gPecorino Romano, finely grated
  • 3 wholeegg whites
  • 80 gcottage cheese (blended smooth)
  • 2 tspcoarsely cracked black pepper
  • 60 mlpasta cooking water
  • 1 to tastesalt

Instructions

  1. Cook pasta in well-salted boiling water; reserve 60ml cooking water.
  2. Toast pepper in dry pan 1 min. Add 30ml pasta water to bloom.
  3. Mix Pecorino, blended cottage cheese, and egg whites in a bowl.
  4. Add hot pasta to pan; remove from heat. Add cheese mixture and pasta water.
  5. Toss vigorously until creamy. Serve immediately with extra Pecorino.
