Ingredients
- 600 graw tiger prawns, peeled
- 400 gcooked jasmine rice
- 1 wholefresh mango, diced
- 1 wholeavocado, diced
- 100 gcucumber, sliced
- 1 wholefresh red chilli, thinly sliced
- 30 mllime juice
- 15 mlfish sauce
- 1 clovegarlic clove, minced
- 15 gfresh coriander, to garnish
- 10 mlolive oil
Instructions
- Whisk lime juice, fish sauce, garlic, and chilli for dressing.
- Toss prawns with a little olive oil and salt. Grill on a hot BBQ or grill pan 2–3 min per side until pink and cooked.
- Divide rice among bowls. Top with mango, avocado, and cucumber.
- Arrange prawns on top. Drizzle with dressing and garnish with fresh coriander.
