Ingredients

  • 600 gchicken thighs, boneless skinless
  • 400 gcanned chickpeas, drained
  • 1 wholeonion, diced
  • 1 wholered bell pepper, diced
  • 400 gcrushed tomatoes
  • 300 mlchicken stock
  • 2 tspsmoked paprika
  • 1 tspcumin
  • 10 mlolive oil
  • 1 to tastesalt and pepper

Instructions

  1. Heat oil in a large pot. Brown chicken thighs 3 min per side; set aside.
  2. Sautรฉ onion and pepper until soft. Add paprika and cumin; stir 1 minute.
  3. Add crushed tomatoes, stock, and chickpeas. Return chicken to pot.
  4. Simmer covered 30 minutes until chicken is tender.
  5. Shred chicken with two forks. Adjust seasoning and serve.
