- 1200 gpork shoulder
- 200 glard
- 2 unitsorange
- 6 clovesgarlic
- 4 unitsbay leaves
- 1 unitcinnamon stick
- 120 mlmilk
- 15 gsalt
- 16 unitscorn tortillas

- 1200 g pork shoulder
- 200 g lard
- 2 units orange
- 6 cloves garlic
- 4 units bay leaves
- 1 unit cinnamon stick
- 120 ml milk
- 15 g salt
- 16 units corn tortillas
Instructions
- Cut pork into 5cm cubes, season liberally with salt.
- Melt lard in heavy pot, add pork, orange juice and zest, garlic, bay, cinnamon and milk.
- Bring to boil then reduce to gentle simmer, cook uncovered 90 min.
- Increase heat and cook until liquid evaporates and pork fries in its own fat, stirring, until golden.
- Shred pork and serve in warm tortillas with salsa verde.
