Ingredients
- 600 gfresh large shrimp, butterflied and cleaned
- 150 mllime juice (freshly squeezed)
- 3 wholeserrano or jalapeño chilli
- 1 wholecucumber, thinly sliced
- 0.5 wholered onion, thinly sliced
- 20 gfresh coriander
- 1 to tastesalt
Instructions
- Blend lime juice, chillies, coriander, and salt into a smooth green sauce.
- Arrange shrimp in a single layer in a flat dish; cover with the aguachile sauce.
- Cure 5–10 min until shrimp turn opaque (the acid "cooks" them).
- Top with cucumber, red onion, and extra coriander.
- Serve immediately with tostadas.
