Ingredients

  • 4 unitsbolillo rolls
  • 400 grefried black beans
  • 200 gOaxacan or Manchego cheese
  • 200 gtomatoes
  • 80 gwhite onion
  • 2 unitsserrano chile
  • 15 gcilantro
  • 1 unitlime
  • 20 gbutter

Ingredients

  • 4 units bolillo rolls
  • 400 g refried black beans
  • 200 g Oaxacan or Manchego cheese
  • 200 g tomatoes
  • 80 g white onion
  • 2 units serrano chile
  • 15 g cilantro
  • 1 unit lime
  • 20 g butter

Instructions

  1. Cut bolillos in half lengthwise, butter cut side.
  2. Toast cut-side down in skillet or under broiler until golden.
  3. Spread warm refried beans generously on each half.
  4. Top with shredded cheese.
  5. Broil until cheese melts and bubbles.
  6. Make pico de gallo: dice tomato, onion, serrano, cilantro; lime dressing.
  7. Spoon pico de gallo over molletes and serve immediately.
