- chicken breast, cooked and shredded
- buffalo sauce
- cream cheese, softened
- blue cheese crumbles
- celery, diced
- green onion
- garlic powder
- ranch dressing (light)
Ingredients
- 4 whole bell peppers (any color)
- 1.5 lb chicken breast, cooked and shredded
- 0.33 cup buffalo sauce
- 4 oz cream cheese, softened
- 0.25 cup blue cheese crumbles
- 2 stalks celery, diced
- 3 whole green onion
- 0.5 tsp garlic powder
- 2 tbsp ranch dressing (light)
Instructions
- Preheat oven to 400°F.
- Slice peppers in half lengthwise, remove seeds and membranes.
- Mix shredded chicken with buffalo sauce, cream cheese, celery, garlic powder, and half the green onion.
- Stuff each pepper half generously with the buffalo chicken mixture.
- Top with blue cheese crumbles.
- Bake 25–30 minutes until peppers are tender and tops are golden.
- Drizzle with ranch and remaining green onion to serve.
