Ingredients

  • 400 glean beef, cubed
  • 300 glean pork, cubed
  • 200 glamb shoulder, cubed
  • 400 gpotatoes, peeled and cubed
  • 200 gcarrots, sliced
  • 150 gceleriac (or celery), cubed
  • 2 wholeonions, diced
  • 1 wholeleek, sliced
  • 1000 mlbeef or vegetable stock (low sodium)
  • 20 gfresh parsley, chopped
  • 5 gmarjoram (fresh or dried)
  • 15 mloil
  • 1 to tastesalt and black pepper

Instructions

  1. Season all meat. Heat oil in a large heavy pot; brown meats in batches over high heat, ~3 min per batch. Remove.
  2. Cook onion in the same pot 3 min. Add all vegetables, meat, marjoram, and stock.
  3. Bring to boil; skim any foam. Reduce heat; cover and simmer 45 min until meat is tender.
  4. Season generously; stir in parsley. Serve in deep bowls with rye bread.
