Ingredients

  • 1500 gwhole chicken
  • 4 wholecarrots
  • 2 wholeleeks
  • 3 wholecelery stalks
  • 1 wholeturnip
  • 1 wholebouquet garni (bay, thyme, parsley)
  • 5 gsalt and black pepper

Instructions

  1. Place chicken in large pot; cover with cold water; bring to boil; skim foam.
  2. Add all vegetables and bouquet garni; season generously.
  3. Simmer 80–90 min until chicken is tender.
  4. Remove chicken; carve; serve in deep bowls with vegetables and broth.
