Ingredients
- 1000 grabbit portions
- 40 gwholegrain mustard
- 20 gDijon mustard
- 200 mldry white wine
- 150 mllight cream
- 4 wholeshallots chopped
- 6 gfresh thyme
- 20 mlolive oil
Instructions
- Coat rabbit pieces with both mustards; marinate 30 min.
- Brown in oil; remove.
- Sauté shallots; deglaze with wine; add thyme.
- Return rabbit; cover and braise 50 min.
- Stir in cream; simmer uncovered 10 min. Serve with rice or tagliatelle.
