Ingredients

  • 500 glean pork mince
  • 200 gchicken liver
  • 100 gbacon rashers
  • 30 mlbrandy
  • 6 gfresh thyme
  • 2 wholebay leaves
  • 2 wholegarlic cloves
  • 2 wholeeggs

Instructions

  1. Blend liver until smooth; mix with pork, bacon, garlic, eggs, brandy, thyme.
  2. Line terrine with bacon; fill with meat mix; top with bay leaves.
  3. Cover with foil; place in water bath.
  4. Bake 160°C 70 min (internal temp 72°C).
  5. Cool; refrigerate 24h before slicing.
