Ingredients
- 400 grainbow trout fillets
- 50 gblanched almonds, roughly chopped
- 1 tsplemon zest
- 30 mllemon juice
- 15 gflat-leaf parsley, chopped
- 15 mlolive oil
- 1 to tastesalt and black pepper
Instructions
- Pat trout fillets dry. Season with salt and pepper.
- Toast almonds in a dry pan 2โ3 minutes until golden; set aside.
- Heat olive oil over medium-high. Cook trout skin-side down 4โ5 min until skin crisps.
- Flip and cook 2โ3 min more.
- Plate trout; scatter toasted almonds, lemon zest, parsley, and drizzle lemon juice.
