- 200 ml Malbec red wine
- 300 ml beef stock
- 4 g smoked paprika
- 1 whole brown onion
- 2 whole carrots
- 4 whole garlic cloves
- 20 g tomato paste
- 20 ml olive oil
Instructions
- Sear beef cheeks until browned all sides.
- Sauté onion, garlic, and carrot with paprika.
- Add tomato paste; stir 2 min.
- Add wine and stock; return cheeks.
- Braise covered at 155°C for 3 hours.
- Shred in braising liquid; serve with polenta or mashed potato.
