Ingredients
- 800 gskinless chicken thighs
- 600 gsweet potatoes, peeled and cubed
- 2 wholered onions, cut into wedges
- 200 gcherry tomatoes
- 4 clovesgarlic cloves, minced
- 5 gdried rosemary
- 3 gdried thyme
- 5 gsmoked paprika
- 20 mlolive oil
- 1 to tastesalt and black pepper
Instructions
- Preheat oven to 200ยฐC / 180ยฐC fan / Gas 6.
- Toss sweet potato cubes and onion wedges in half the olive oil, paprika, rosemary, thyme, salt, and pepper. Spread over a large roasting tin.
- Rub chicken thighs with remaining oil, garlic, salt, and pepper. Nestle on top of vegetables.
- Roast 35 min. Add cherry tomatoes around the chicken; roast a further 10 min until chicken is golden and cooked through.
- Rest 5 min before serving.
