Ingredients

  • 120 gsmoked salmon
  • 150 gcooked quinoa
  • 80 gedamame
  • 0.5 piececucumber
  • 1 tbsppickled ginger
  • 1fresh dill
  • 2 tbsplemon juice
  • 1 tbspolive oil
  • 1 tspsesame seeds
  • 2 stalksspring onion

Ingredients

  • 120 g smoked salmon
  • 150 g cooked quinoa
  • 80 g edamame
  • 0.5 piece cucumber
  • 1 tbsp pickled ginger
  • small bunch fresh dill
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp sesame seeds
  • 2 stalks spring onion

Instructions

  1. Cook quinoa if needed, cool.
  2. Use a peeler to create cucumber ribbons.
  3. Whisk lemon juice and olive oil for dressing.
  4. Layer quinoa in a bowl, top with edamame, cucumber, smoked salmon, ginger.
  5. Drizzle dressing, scatter dill, spring onion and sesame seeds.
