London Street Market Steak Bao

Ingredients

  • 300 gsirloin steak
  • 4 piecesbao buns
  • 100 gcucumber
  • 2 tbsprice vinegar
  • 1 tbspsriracha
  • 2 tbsplight mayo
  • 1 tspsesame seeds
  • 3 stalksspring onions
  • 1 tbspsoy sauce
  • 1 tspsesame oil

Ingredients

  • 300 g sirloin steak
  • 4 pieces bao buns
  • 100 g cucumber
  • 2 tbsp rice vinegar
  • 1 tbsp sriracha
  • 2 tbsp light mayo
  • 1 tsp sesame seeds
  • 3 stalks spring onions
  • 1 tbsp soy sauce
  • 1 tsp sesame oil

Instructions

  1. Slice cucumber thin, toss with rice vinegar and a pinch of salt. Set aside to pickle for 10 minutes.
  2. Season steak with soy sauce and sesame oil, rest 5 minutes.
  3. Sear steak in a very hot griddle pan 2 minutes per side for medium. Rest, then slice thin.
  4. Mix sriracha into mayo.
  5. Steam bao buns in a bamboo steamer for 5 minutes.
  6. Fill buns with steak, pickled cucumber, sriracha mayo, spring onions and sesame seeds.
