Griddled Steak with Chimichurri

Ingredients

  • 400 gsirloin steak
  • 200 gtenderstem broccoli
  • 1fresh flat-leaf parsley
  • 3 clovesgarlic
  • 2 tbspred wine vinegar
  • 4 tbspolive oil
  • 0.5 tspchilli flakes
  • 1 tspdried oregano
  • 1 tbsplemon juice
  • 1salt and pepper

Ingredients

  • 400 g sirloin steak
  • 200 g tenderstem broccoli
  • large bunch fresh flat-leaf parsley
  • 3 cloves garlic
  • 2 tbsp red wine vinegar
  • 4 tbsp olive oil
  • 0.5 tsp chilli flakes
  • 1 tsp dried oregano
  • 1 tbsp lemon juice
  • to taste salt and pepper

Instructions

  1. Blitz parsley, garlic, vinegar, 3 tbsp oil, chilli, oregano and lemon for chimichurri.
  2. Season steak generously. Heat griddle pan until smoking.
  3. Grill steak 3 minutes per side for medium-rare. Rest 5 minutes.
  4. Blanch broccoli 2 minutes, drain, toss in remaining oil and seasoning. Griddle 2 minutes.
  5. Slice steak, serve with chimichurri and broccoli.
