  • 300 gMexican chorizo
  • 8 unitseggs
  • 12 unitscorn tortillas
  • 80 gwhite onion
  • 1 unitserrano chile
  • 150 gtomato
  • 15 gcilantro
  • 120 mlsalsa verde
  • 2 unitslime

Ingredients

  • 300 g Mexican chorizo
  • 8 units eggs
  • 12 units corn tortillas
  • 80 g white onion
  • 1 unit serrano chile
  • 150 g tomato
  • 15 g cilantro
  • 120 ml salsa verde
  • 2 units lime

Instructions

  1. Remove chorizo from casing, cook in skillet until fat renders and meat is cooked.
  2. Add diced onion and serrano, cook 2 min.
  3. Add diced tomato, cook 2 min.
  4. Pour in beaten eggs, scramble gently with chorizo until just set.
  5. Warm tortillas, fill with chorizo-egg mixture.
  6. Serve with salsa verde, cilantro and lime.
