Ingredients

  • 400 gmasa harina
  • 400 gchicken breast, cooked and shredded
  • 3 wholepoblano chillies, roasted, peeled and sliced
  • 150 gOaxacan or mozzarella cheese, shredded
  • 400 mlchicken stock (warm)
  • 80 glard or coconut oil
  • 2 tspbaking powder
  • 16 wholedried corn husks, soaked
  • 1 to tastesalt

Instructions

  1. Beat lard with baking powder until fluffy. Beat in masa harina alternately with warm stock until dough is spreadable.
  2. Spread masa on soaked husks. Top with chicken, chile strips, and cheese.
  3. Fold husks to enclose. Steam upright in a large pot 50–60 min until masa pulls cleanly.
  4. Rest 10 min before serving.
