Ingredients

  • 350 gmasa harina
  • 300 mlwarm water
  • 200 gpork chicharrón
  • 400 gtomatillos
  • 3 unitsserrano chiles
  • 3 clovesgarlic
  • 100 gonion
  • 15 gcilantro
  • 30 mllard or oil
  • 60 gCotija cheese

Ingredients

  • 350 g masa harina
  • 300 ml warm water
  • 200 g pork chicharrón
  • 400 g tomatillos
  • 3 units serrano chiles
  • 3 cloves garlic
  • 100 g onion
  • 15 g cilantro
  • 30 ml lard or oil
  • 60 g Cotija cheese

Instructions

  1. Mix masa with water and salt to form soft dough.
  2. Form thick oval patties, cook on comal until dry.
  3. Boil tomatillos, serranos and garlic; blend with onion and cilantro.
  4. Fry salsa verde in lard until thickened.
  5. Break chicharrón into pieces, simmer in salsa 5 min.
  6. Split gorditas down the side, stuff with chicharrón in salsa.
  7. Top with Cotija and serve.
