- 300 gstale white bread cubed
- 120 gSpeck (South Tyrolean smoked ham) diced
- 200 mlwhole milk
- 3 wholeeggs
- 80 gonion finely diced
- 20 gfresh chives chopped
- 40 gplain flour
- 1500 mlbeef stock
- 20 gbutter
- 15 gfresh parsley
Instructions
- Soak bread cubes in milk for 20 minutes until soft.
- Sauté onion in butter until golden; add speck and cook 3 minutes.
- Squeeze excess milk from bread; mix in eggs, flour, chives, parsley, and speck-onion mixture. Season.
- Shape into 8 golf-ball-sized dumplings with wet hands.
- Bring stock to a gentle simmer; cook dumplings for 15–18 minutes (do not boil).
- Serve 2 dumplings per bowl with plenty of hot broth and grated Parmesan.
