Ingredients
- 1000 gchicken pieces (legs, thighs)
- 100 gdry-cured chorizo, sliced
- 3 wholered and yellow bell peppers, sliced
- 400 gcanned peeled tomatoes
- 1 wholeonion, sliced
- 3 wholegarlic cloves, sliced
- 1 tspEspelette pepper or cayenne
- 1 bouquetthyme and bay leaves
- 15 mlolive oil
Instructions
- Brown chicken pieces in olive oil over medium-high; set aside.
- Sautรฉ chorizo until fat renders. Add onion, peppers, and garlic; soften 8 min.
- Add tomatoes, Espelette, and herb bouquet. Return chicken.
- Simmer covered 30 min until chicken is cooked through.
- Remove lid; reduce sauce 5 min. Remove herbs and serve.
