Ingredients
- 500 gmixed wild mushrooms sliced
- 200 gquark or Greek yoghurt
- 700 mlvegetable stock
- 1 wholeonion diced
- 2 wholegarlic cloves
- 8 gfresh thyme
- 20 gbutter
Instructions
- Sautรฉ onion and garlic in butter until soft.
- Add mushrooms and thyme; cook 8 min.
- Pour in stock; simmer 15 min.
- Blend half the soup; return to pot.
- Stir in quark; season; do not boil.
