  • 300 gfresh pasta dough or wonton wrappers
  • 250 gground pork
  • 150 gfresh spinach wilted and chopped
  • 100 gonion finely diced
  • 1 wholeegg
  • 4 gdried marjoram
  • 1200 mlbeef stock
  • 100 gonion for garnish thinly sliced
  • 30 gbutter
  • 10 gfresh chives

Instructions

  1. Mix pork, spinach, onion, egg, marjoram, salt, and pepper to make filling.
  2. Roll pasta dough thin; cut into 12×12 cm squares.
  3. Place a tablespoon of filling in each; fold into rectangles and press edges to seal.
  4. Simmer maultaschen in beef stock for 10–12 minutes until cooked through.
  5. Sauté sliced onion in butter until golden and caramelised.
  6. Ladle broth and maultaschen into bowls; top with onion rings and snipped chives.
