- 600 gchicken thighs (bone-in)
- 400 gsweet potato
- 1 largeonion
- 4 piecegarlic cloves
- 25 mlolive oil
- 5 gpaprika
- 3 gcumin
- 20 mllime juice
- 6 gsalt
- 5 grosemary

- 400 g sweet potato
- 1 large onion
- 4 piece garlic cloves
- 25 ml olive oil
- 5 g paprika
- 3 g cumin
- 20 ml lime juice
- 6 g salt
- 5 g rosemary
Instructions
- Marinate chicken in olive oil, lime juice, garlic, paprika, cumin, and salt for 30 minutes.
- Peel and cube sweet potatoes into 3cm pieces. Toss with olive oil and salt.
- Arrange chicken and sweet potato on a sheet pan. Scatter onion wedges and rosemary.
- Roast at 200°C for 35-40 minutes until chicken is golden and sweet potato is tender.
- Serve directly from the pan with lime wedges.
