Ingredients

  • 500 gsquid tubes cleaned
  • 80 grice flour
  • 5 gcoarse sea salt
  • 5 gwhite pepper
  • 3 gSichuan pepper crushed
  • 500 mlvegetable oil for frying
  • 1 wholered chilli sliced
  • 3 wholespring onions sliced
  • 60 mlsweet chilli sauce

Instructions

  1. Score squid tubes in a cross-hatch; cut into 4 cm pieces.
  2. Combine rice flour, salt, white pepper, and Sichuan pepper in a bowl.
  3. Toss squid in the flour mix to coat evenly; shake off excess.
  4. Heat oil in a wok to 180 ยฐC; fry squid in batches for 90 seconds until golden.
  5. Drain on paper; toss with chilli and spring onion.
  6. Serve immediately with sweet chilli dipping sauce.
