  • 3 wholepotatoes
  • 4 wholeeggs
  • 1 wholewhite onion
  • 60 mlsunflower oil
  • 2 gsea salt
  • 1 gblack pepper
  • 5 gparsley

  • 4 whole eggs
  • 1 whole white onion
  • 60 ml sunflower oil
  • 2 g sea salt
  • 1 g black pepper
  • 5 g parsley

Instructions

  1. Slice potatoes thinly; fry in oil over medium heat 15 min until tender.
  2. Sauté onion separately until soft.
  3. Combine potatoes and onion; drain excess oil.
  4. Beat eggs with salt; pour over potato mixture.
  5. Cook on low 8 min; flip onto plate; slide back into pan 5 min.
  6. Garnish with parsley.
