- 2 whole tomatoes diced
- 0.5 whole red onion diced
- 10 g parsley
- 15 ml red wine vinegar
Instructions
- Marinate pork with garlic, cumin, paprika, and olive oil 30 min.
- Grill butterflied pork 6–8 min per side.
- Mix diced tomatoes, onion, parsley, vinegar, and oil for criolla.
- Rest pork 5 min; slice.
- Serve with criolla salsa.
