Ingredients

  • 400 mlliquid egg whites
  • 80 gbaby spinach
  • 120 gbutton mushrooms, sliced
  • 1 wholered bell pepper, diced
  • 0.5 wholeonion, diced
  • 1 clovegarlic clove, minced
  • 5 mlolive oil spray
  • 5 geverything bagel seasoning (or salt and pepper)
  • 30 glow-fat feta, crumbled (optional)

Instructions

  1. Spray a non-stick skillet with olive oil and heat over medium-high.
  2. Add onion and bell pepper; cook 3 min. Add mushrooms and garlic; cook 2 min.
  3. Add spinach; stir until wilted, ~1 min.
  4. Pour egg whites over vegetables. Let set for 30 seconds then fold gently with a spatula until just cooked, 2โ€“3 min.
  5. Season with everything bagel seasoning. Crumble feta on top if using. Serve immediately.
