Ingredients
- 400 mlliquid egg whites
- 80 gbaby spinach
- 120 gbutton mushrooms, sliced
- 1 wholered bell pepper, diced
- 0.5 wholeonion, diced
- 1 clovegarlic clove, minced
- 5 mlolive oil spray
- 5 geverything bagel seasoning (or salt and pepper)
- 30 glow-fat feta, crumbled (optional)
Instructions
- Spray a non-stick skillet with olive oil and heat over medium-high.
- Add onion and bell pepper; cook 3 min. Add mushrooms and garlic; cook 2 min.
- Add spinach; stir until wilted, ~1 min.
- Pour egg whites over vegetables. Let set for 30 seconds then fold gently with a spatula until just cooked, 2โ3 min.
- Season with everything bagel seasoning. Crumble feta on top if using. Serve immediately.
