High-Protein Scotch Eggs

Crispy baked Scotch eggs with a runny centre, made with lean pork and turkey sausage. A British classic with 30g protein each. Perfect picnic or pub snack.

Ingredients

  • 6 wholeeggs
  • 250 glean pork mince
  • 150 gturkey mince
  • 1 tspfresh sage
  • 0.5 tspmustard powder
  • 80 gbreadcrumbs
  • 1 wholebeaten egg
  • 30 gplain flour
  • 1salt and pepper

Ingredients

  • 6 whole eggs
  • 250 g lean pork mince
  • 150 g turkey mince
  • 1 tsp fresh sage
  • 0.5 tsp mustard powder
  • 80 g breadcrumbs
  • 1 whole beaten egg
  • 30 g plain flour
  • to taste salt and pepper

Instructions

  1. Soft boil 4 eggs 6 minutes, cool in iced water, peel carefully.
  2. Mix pork mince, turkey, sage, mustard, salt, pepper.
  3. Divide into 4. Flatten each portion, wrap around an egg, pressing seams.
  4. Dust in flour, dip in beaten egg, roll in breadcrumbs.
  5. Bake at 200°C for 25 minutes until golden. Cool slightly before serving.
