British Beef and Ale Stew

Ingredients

  • 700 glean beef chuck
  • 330 mlBritish ale
  • 400 mlbeef stock
  • 3 mediumcarrots
  • 2 mediumparsnips
  • 1 largeonion
  • 3 clovesgarlic
  • 2 tbsptomato paste
  • 4 sprigsfresh thyme
  • 2 piecesbay leaves
  • 1 tbspolive oil
  • 1 tbspcornflour

Ingredients

  • 700 g lean beef chuck
  • 330 ml British ale
  • 400 ml beef stock
  • 3 medium carrots
  • 2 medium parsnips
  • 1 large onion
  • 3 cloves garlic
  • 2 tbsp tomato paste
  • 4 sprigs fresh thyme
  • 2 pieces bay leaves
  • 1 tbsp olive oil
  • 1 tbsp cornflour

Instructions

  1. Brown beef in batches in hot oil, set aside.
  2. Fry onion and garlic 5 minutes. Add tomato paste, cook 1 minute.
  3. Return beef. Pour in ale and stock. Add thyme, bay, carrots and parsnips.
  4. Bring to simmer, cover and cook low 80 minutes until beef is tender.
  5. Mix cornflour with cold water, stir in to thicken. Simmer 5 minutes. Season and serve.
