Ingredients

  • 1200 gbone-in mutton (or lamb), cut into pieces
  • 3 wholeonions, finely sliced
  • 150 glow-fat yogurt
  • 30 ggarlic and ginger paste
  • 15 gKashmiri red chilli powder
  • 10 gwhole spices: cloves, cardamoms, cinnamon, bay leaves
  • 5 gfennel powder
  • 3 gdried ginger powder (sonth)
  • 30 mloil
  • 1 to tastesalt

Instructions

  1. Heat oil; fry whole spices 30 sec. Add onions and cook 15–18 min until deeply golden brown.
  2. Add garlic-ginger paste; cook 3 min. Add Kashmiri chilli, fennel, and ginger powder; cook 2 min.
  3. Add mutton pieces; sear on high heat 5 min until browned.
  4. Beat yogurt and add gradually, stirring to prevent curdling.
  5. Add 200 ml water; cover and cook on low heat 60–70 min, stirring occasionally, until mutton is tender.
  6. Serve with steamed rice or naan.
