Ingredients
- 700 gchicken breasts, thinly sliced
- 300 gfresh pineapple, cubed
- 1 wholered bell pepper, sliced
- 1 wholeonion, sliced
- 3 clovesgarlic cloves, minced
- 10 gfresh ginger, grated
- 30 mlsoy sauce (low sodium)
- 20 mllime juice
- 15 gfresh coriander, chopped
- 15 mloil
Instructions
- Mix soy sauce and lime juice. Toss chicken in half; marinate 5 min.
- Heat oil in a wok or large pan over high heat. Cook chicken in batches until golden, ~4 min. Remove.
- In the same pan, stir-fry onion and pepper 3 min. Add garlic and ginger; cook 1 min.
- Add pineapple and remaining soy-lime mix; cook 2 min until caramelising.
- Return chicken; toss together 1 min. Garnish with coriander. Serve over white rice.
