Ingredients

  • 600 gchicken breast, cooked and shredded
  • 600 gsweet potato, peeled and cubed
  • 1 wholeonion, diced
  • 2 wholetomato, diced
  • 3 wholegarlic cloves, minced
  • 50 glow-fat cream cheese
  • 15 mlolive oil
  • 1 to tastesalt, pepper, cumin

Instructions

  1. Boil sweet potato until tender; mash with cream cheese and season. Set aside.
  2. Sauté onion and garlic in olive oil. Add tomato and cook 5 min.
  3. Add shredded chicken; season with salt, pepper, cumin. Cook 5 min.
  4. Spread chicken mixture in baking dish; top with sweet potato purée.
  5. Bake at 200°C for 20 min until top is lightly golden.
