  • 1.5 lb chicken breast
  • 0.25 cup BBQ sauce (low-sugar)
  • 2 cup brown rice, cooked
  • 1 can black beans, drained
  • 1 cup frozen corn, thawed
  • 1 whole avocado, sliced
  • 2 tbsp lime juice
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp salt

Instructions

  1. Season chicken breast with smoked paprika, garlic powder, and salt.
  2. Grill or pan-sear chicken 6–7 minutes per side until internal temp reaches 165°F.
  3. Brush with BBQ sauce in the last 2 minutes of cooking. Let rest 5 minutes, then slice.
  4. Warm black beans and corn in a small saucepan.
  5. Divide rice into 4 bowls. Top with chicken, beans, corn, and avocado slices.
