Aussie Lamb Kofta with Tabbouleh

Ingredients
- 700 glean lamb mince
- 3 clovesgarlic cloves, minced
- 5 gground cumin
- 5 gground coriander
- 3 gsmoked paprika
- 200 gbulgur wheat, cooked
- 40 gfresh flat-leaf parsley, finely chopped
- 20 gfresh mint, finely chopped
- 3 wholetomatoes, finely diced
- 1 wholecucumber, finely diced
- 30 mllemon juice
- 25 mlolive oil
- 100 glow-fat tzatziki, to serve
- 1 to tastesalt and black pepper
Instructions
- Mix lamb mince with garlic, cumin, coriander, paprika, salt, and pepper. Shape into 12 oval koftas around skewers.
- Grill on a hot BBQ or griddle pan 10โ12 min, turning regularly, until cooked through.
- Toss bulgur with parsley, mint, tomato, cucumber, lemon juice, olive oil, salt, and pepper for tabbouleh.
- Serve koftas over tabbouleh with tzatziki on the side.
