Ingredients

  • 4 wholeround zucchinis (zapallitos)
  • 400 glean ground beef
  • 1 wholeonion, finely diced
  • 2 wholehard-boiled eggs, chopped
  • 60 glow-fat mozzarella, shredded
  • 1 wholetomato, diced
  • 10 mlolive oil
  • 1 to tastesalt, pepper, cumin

Instructions

  1. Halve zucchinis and scoop out pulp; chop pulp and set aside.
  2. Sauté onion in olive oil until soft. Add beef and cook through, seasoning with salt, pepper, and cumin.
  3. Add chopped zucchini pulp and tomato; cook 5 minutes.
  4. Remove from heat, fold in chopped eggs.
  5. Fill zucchini shells, top with mozzarella.
  6. Bake at 200°C for 20–25 minutes until cheese is golden.
