Ingredients

  • 900 gground turkey (93% lean)
  • 2 wholeegg whites
  • 60 goat flour (or quick oats, blended)
  • 1 wholeonion, finely grated
  • 1 tspgarlic powder
  • 15 mlWorcestershire sauce
  • 60 gtomato paste
  • 15 mlapple cider vinegar
  • 800 gsweet potatoes, peeled and cubed
  • 60 mllow-fat milk
  • 1 to tastesalt and black pepper

Instructions

  1. Preheat oven to 190ยฐC / 375ยฐF. Line a loaf pan with parchment.
  2. Mix turkey, egg whites, oat flour, grated onion, garlic powder, Worcestershire, 40 g tomato paste, salt, and pepper until combined. Do not overwork.
  3. Press mixture into loaf pan. Mix remaining 20 g tomato paste with apple cider vinegar for glaze; brush over top.
  4. Bake 50โ€“55 min until internal temperature reaches 74ยฐC / 165ยฐF. Rest 10 min before slicing.
  5. Meanwhile boil sweet potatoes until tender, ~15 min. Drain and mash with milk, salt, and pepper.
  6. Slice meatloaf and serve with sweet potato mash.
