Ingredients

  • 800 gskinless chicken thighs
  • 600 gsweet potatoes, peeled and cubed
  • 2 wholered onions, cut into wedges
  • 200 gcherry tomatoes
  • 4 clovesgarlic cloves, minced
  • 5 gdried rosemary
  • 3 gdried thyme
  • 5 gsmoked paprika
  • 20 mlolive oil
  • 1 to tastesalt and black pepper

Instructions

  1. Preheat oven to 200ยฐC / 180ยฐC fan / Gas 6.
  2. Toss sweet potato cubes and onion wedges in half the olive oil, paprika, rosemary, thyme, salt, and pepper. Spread over a large roasting tin.
  3. Rub chicken thighs with remaining oil, garlic, salt, and pepper. Nestle on top of vegetables.
  4. Roast 35 min. Add cherry tomatoes around the chicken; roast a further 10 min until chicken is golden and cooked through.
  5. Rest 5 min before serving.
