Turkey Bubble and Squeak

- 300 gleftover roast turkey meat
- 300 gmashed potato
- 200 gcooked Savoy cabbage or Brussels sprouts
- 80 gwhite onion
- 30 gbutter
- 20 mlvegetable oil
- 2 wholeeggs (for serving)
- 30 mlHP sauce or brown sauce
- 3 gsalt and black pepper
Instructions
- Shred or roughly chop the leftover turkey. Slice the onion. Chop the cooked cabbage or halve the sprouts.
- Melt butter in a large non-stick skillet over medium heat. Fry the onion for 4 minutes until softened.
- In a bowl, combine the mashed potato, cooked cabbage and three-quarters of the turkey. Season well with salt and pepper. Mix until combined but not completely smooth — you want texture.
- Add the potato-cabbage mixture to the pan. Press into a large, even cake with a spatula.
- Cook undisturbed for 7–8 minutes until the bottom forms a deep golden crust. Check by lifting an edge.
- Flip in sections (it doesn't have to be perfect — the crispy bits and rough edges are what makes it). Add the remaining turkey on top. Cook for another 5–6 minutes until golden on the new bottom.
- Meanwhile, fry the eggs in a separate pan to your liking. Serve the bubble and squeak topped with a fried egg and a generous splosh of HP sauce.
